Homemade Lavender Lemonade

This simple Lavender Lemonade recipe combines freshly squeezed lemon juice with a homemade lavender-infused syrup for a drink that’s both soothing and invigorating. The perfect drink for a warm summer day!

  • Lemons: Freshly squeezed is best for that bright, zesty flavor. Roll them before juicing to get the most out of them! I generally need 4-5 lemons to get 1 cup (240 ml) of lemon juice.
  • Sugar: For the smoothest lemonade, sugar is first dissolved in simmering water to create a simple syrup. You’ll then steep the lavender in the syrup for 15 minutes.
  • Sea salt: Salt in lemonade? Trust me on this one. Just 1/8 teaspoon is all you need to balance any bitterness in the lavender and enhance the sweetness of the lemonade. Feel free to substitute kosher salt.
  • Water: The amount of water you add to your lemonade is completely up to you! I generally add about 5 cups, but make sure to adjust to taste.

Step 1: Bring the sugar, salt and water to a simmer. Stir until the sugar dissolves.

Step 2: Remove from heat and add the lavender. Cover and steep for 15 minutes.

Step 4: Mix together the lavender simple syrup and lemon juice. Add water to taste (about 5 cups).

Storage

Leftover lavender lemonade can be stored in an airtight container in the refrigerator for up to 5 days.

Expert tips and tricks

  • Use quality lavender. For best results, use culinary-grade English lavender. It has the sweetest floral taste and less bitterness.
  • Adjust strength of lemonade to taste. You can adjust the taste of your lemonade by adding more water. Taste as you go, adding water gradually until the lemonade reaches your perfect balance of sweetness and tartness.
  • Don’t forget the garnish! Lemon slices and fresh sprigs of lavender are the perfect garnish for this summer cocktail.
  • Make a lavender sugar rim. Combine 1/2 teaspoon lavender with 1 tablespoon granulated sugar and pulse in a spice grinder until finely ground. Mix with 1/2 cup (100 grams) granulated sugar. Wet the rim of each glass with a lemon wedge, then dip in the lavender sugar.

Ingredients

  • 1 cup (200 grams) granulated sugar
  • 1/8 teaspoon sea salt
  • 1.5 tablespoons dried culinary lavender
  • 1 cup (240 ml) freshly squeezed lemon juice (about 45 lemons)
  • 56 cups (1.2-1.4L) water, divided

Instructions

  1. Make the lavender syrup. In a small saucepan, combine the sugar, salt, and 1 cup of water. Heat over medium-low, stirring occasionally, until the sugar dissolves and the mixture simmers lightly. Remove from heat, stir in the lavender, cover, and let steep for 15 minutes. Strain out and discard the lavender.
  2. In a large pitcher, combine the lavender syrup, lemon juice, and 4-5 cups of water (adjust to taste). Stir well and chill before serving.
  3. To serve, pour over ice and garnish with a lemon slice or a sprig of lavender if desired.
