The inspiration for this chia pudding started as a craving for mint chocolate chip ice cream. Somewhere in the process of recipe development I found that matcha powder produced a delightfully minty color, but the matcha chia pudding was so tasty on its own that mint chocolate chip became matcha chocolate chip!

chocolate chia pudding
- chia seeds ¼ c (40 g)
- almond milk 1 c (240 ml)
- cocoa powder 1.5 tbsp
- honey 1 tbsp
- vanilla extract ½ tsp
matcha chia pudding
- chia seeds ¼ c (40 g)
- almond milk 1 c (240 ml)
- matcha powder ½ tbsp
- honey 1 tbsp
- vanilla extract ½ tsp
- mini chocolate chips to garnish
instructions
- Stir together all ingredients for the chocolate chia pudding in one bowl and all ingredients (except for the chocolate chips) for the matcha chia pudding in a separate bowl.
- Let the mixtures settle for five minutes and then stir again to prevent clumping.
- Store in the refrigerator for at least two hours or overnight.
- Layer the chia pudding into small glasses or jars and garnish with chocolate chips if desired.
