There’s no need to cook up anything for your next potluck party, just bring along this super simple watermelon salad with feta and I guarantee it’ll be a hit! To make this summer salad, sweet watermelon and refreshing cucumber are combined with a slightly salty feta. Next, everything is mixed together with chopped fresh mint and lime juice. And that’s it — you’re done! You’ve got a delicious side that’s much more fun than a traditional fruit salad!

When making this summer dish, I like to cut my watermelon into cubes of a little less than an inch (2 cm) and then chop the cucumber so that the chunks are roughly the same size. Then you can either crumble the feta on top or cut it into small cubes for a more elegant presentation. The dressing for the salad really only consists of mint and lime juice! If you want a bit of extra flavor you could add a dash of olive oil or red wine vinegar, but I think one of my favorite things about this dish is its simplicity. The watermelon and feta are already incredibly flavorful on their own!

I recommend making this watermelon salad just before you’re ready to serve it. While some dishes are better after the flavors have had a chance to meld together, I would argue that this salad is best when everything is crisp and fresh! If you do need to make this salad several hours before it will be enjoyed, you can mix the watermelon, feta, cucumber and mint together in advance and add the lime juice and salt right before serving.

ingredients

  • watermelon 750 g (5 c)
  • (seedless and cubed)
  • english cucumber 1 large
  • feta 120 g (4 oz)
  • chopped mint 1 tbsp
  • lime juice 1 lime
  • salt ¼ tsp

instructions

  1. Cut the watermelon into cubes and chop the cucumber.
  2. In a large bowl, add the cucumber and watermelon. Crumble the feta over top (or cut into chunks).
  3. Add the chopped mint and squeeze in the juice of one lime.
  4. Sprinkle with a pinch of salt, mix all ingredients together and serve immediately!
