Dreamy, creamy lemon posset is a custard-like treat made with just a few ingredients!
Bring the heavy cream, sugar, lemon zest and salt to a boil and cook for 3 minutes.
Remove from heat and stir in the lemon juice.
Strain the mixture and discard the lemon zest. Pour into ramekins and chill for 3 hours before digging in!
Serve your lemon posset with shortbread, fresh berries and a few mint leaves!
