Blueberry streusel muffins

These blueberry buttermilk muffins with a streusel topping are an irresistible bakery-style breakfast!

Mix cold cubes of butter with flour, brown sugar, oats and pecans to create your crispy, crunchy topping.

Start with the streusel.

Mix together the dry ingredients, then mix together the wet ingredients. Now just combine!

Make the muffin batter.

I like fresh blueberries, but frozen will also work well. Make sure to add frozen blueberries directly from the freezer so that they are less likely to discolor the batter.

Fold in the blueberries.

If using a standard muffin tin, stagger the muffins so the tops have room to expand.

Transfer the batter to a muffin tin.

Be generous - the streusel is the best part!

Sprinkle the streusel over the top.

The muffins need about 30 minutes in the oven and then they're ready for you to enjoy!
