Ingredients
- unsalted butter for greasing
- 2 large eggs
- ⅔ cup (130 grams) granulated sugar
- ½ teaspoon kosher salt
- 1 cup (125 grams) all purpose flour, sifted
- 1 large (200 grams) apple (gala and honeycrisp work well)
Instructions

Preheat oven to 350°F (180°C).
- Grease an 8-inch (20 cm) round cake pan.
- Combine eggs, sugar and salt in a bowl. Beat the mixture until it turns pale and becomes frothy (about 3 minutes).
- Gently fold in half of the flour until just mixed. Repeat with the remaining flour and be sure not to overwork the batter.
- Core the apple and cut it into 16 slices.
- Add half of the batter to the cake pan and spread it across the bottom. Place the apple slices on top in a single layer. Cover evenly with the remaining batter.
- Bake for 30 minutes or until golden brown. The cake is ready when an inserted toothpick comes out clean.
