Ingredients
For One Cocktail
- 10 mint leaves
- ½ ounce (15 ml) absinthe
- ¾ ounce (20 ml) lime juice
- 1.5 ounces (50 ml) honey simple syrup (recipe for honey simple syrup below)
- club soda to top
Honey Simple Syrup*
- ½ cup (125 ml) honey
- ½ cup (125 ml) water
Instructions
Honey Simple Syrup

Stir the honey and hot water until the honey has dissolved.

Cool to room temperature and store in an airtight container for up to two weeks.
Absinthe Mojito

Add mint, absinthe, lime juice, honey simple syrup and ice to a cocktail shaker and shake vigorously.

Pour into a glass and top with club soda.

Garnish with extra mint leaves and lime wedges.
Notes
Honey simple syrup: You can make as much or as little simple syrup as you want – just make sure to use equal parts honey and water!
