Chocolate Amaretto Truffles

  • 8 ounces (230 grams) semi-sweet chocolate
  • ½ cup (120 ml) heavy cream
  • 1 tablespoon (15 grams) unsalted butter, room temperature
  • 2 tablespoons amaretto liqueur

  • unsweetened cocoa powder
  • chopped nuts
  • sprinkles

  1. Finely chop the chocolate and place in a heat safe bowl.
  2. Heat the heavy cream in a small saucepan over medium heat and bring to a simmer.
  3. Pour the heavy cream over the chopped chocolate and allow to sit for three minutes untouched.
  4. Whisk until the chocolate has melted.
  5. Add the amaretto and butter. Whisk until smooth.
  6. Cover the bowl with plastic wrap and refrigerate for two hours or up to overnight.
  7. While the chocolate is refrigerating, prepare your toppings on a shallow plate.
  8. Scoop out about one tablespoon of chocolate at a time and roll into balls.
  9. Roll into your favorite toppings and refrigerate for up to two weeks.
