Beer Battered Fried Sage

Ingredients

  • 20 sage leaves
  • ½ cup (60 grams) all purpose flour
  • 2.5 tablespoons (18 grams) cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup (120 ml) light beer
  • vegetable oil for frying

Instructions

  1. Mix together the flour, cornstarch, baking powder and salt in a bowl. Add the beer and mix until smooth.
  2. Heat approximately one inch (2.5 cm) of oil in a small pot over medium to medium-high heat. If using a thermometer, the oil should be at about 380°F (190°C). Alternatively drop a pinch of flour into the oil – it’s ready for frying if it starts to bubble.
  3. When the oil is hot, dip each sage leaf into the batter and let the excess drip off.
  4. Working in batches, fry each leaf for 2 minutes on each side or until golden brown.
  5. Remove to a paper towel lined plate to absorb any excess oil. Sprinkle with salt and serve warm.
