Ingredients
- 24 dates*, pitted
- 4 ounces (110 grams) goat cheese
- 6 slices prosciutto
- fresh thyme (optional) to garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Make a slit in each date lengthwise (but don’t cut all the way through) and discard the pit.
- Stuff the dates with goat cheese.
- Cut each prosciutto slice into four pieces (You can cut each slice of prosciutto into two long slices and then cut each of those in half). Wrap a small slice of prosciutto around each date. Secure with a toothpick if needed.
- Bake the dates on the prepared baking sheet for 8-10 minutes or until the prosciutto is slightly crispy.
- Garnish with thyme leaves if desired.
Notes
Dates: I generally use medjool dates, but have also used Deglet Noor dates with great results.
Spicy maple glaze: For a spicy twist, mix together 3 tablespoons pure maple syrup and 1/4-1/2 teaspoon cayenne. Glaze the prosciutto wrapped dates before baking.
Make ahead: You can stuff and wrap the dates a day in advance and bake right before serving.
Storage: Leftover prosciutto wrapped dates can be stored in the refrigerator for 3 days.
