Prosciutto Wrapped Dates Recipe

Ingredients

  • 24 dates*, pitted
  • 4 ounces (110 grams) goat cheese
  • 6 slices prosciutto
  • fresh thyme (optional) to garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Make a slit in each date lengthwise (but don’t cut all the way through) and discard the pit.
  3. Stuff the dates with goat cheese.
  4. Cut each prosciutto slice into four pieces (You can cut each slice of prosciutto into two long slices and then cut each of those in half). Wrap a small slice of prosciutto around each date. Secure with a toothpick if needed.
  5. Bake the dates on the prepared baking sheet for 8-10 minutes or until the prosciutto is slightly crispy.
  6. Garnish with thyme leaves if desired.

Notes

Dates: I generally use medjool dates, but have also used Deglet Noor dates with great results.

Spicy maple glaze: For a spicy twist, mix together 3 tablespoons pure maple syrup and 1/4-1/2 teaspoon cayenne. Glaze the prosciutto wrapped dates before baking.

Make ahead: You can stuff and wrap the dates a day in advance and bake right before serving.

Storage: Leftover prosciutto wrapped dates can be stored in the refrigerator for 3 days.
