Ingredients

Red Wine Roasted Plums

  • 4 medium black plums
  • 1 cup (240 ml) dry red wine
  • 1 tablespoon brown sugar
  • 2 whole star anise
  • 1 cinnamon stick
  • 4 whole cloves

Mascarpone Whipped Cream

  • 4 ounces (110 grams) mascarpone
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract
  • ¾ cups (180 ml) heavy cream

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut the plums in half and remove the pits.
  3. Place the plums in a baking dish in a single layer (cut-side up).
  4. Pour the wine over the plums and sprinkle with brown sugar. Add the spices to the dish.
  5. Bake the plums for 20 minutes or until tender. Remove the plums from the oven once halfway through and spoon the wine over the plums.
  6. While the plums are baking make the mascarpone whipped cream. Beat the mascarpone, sugar and vanilla extract together until light and fluffy. In a separate bowl, beat the heavy cream until stiff peaks form. Fold the cream into the mascarpone mixture and store in the refrigerator.
  7. Serve the plums warm with mascarpone whipped cream.
