Gorgonzola, Prosciutto and Fig Pizza

Ingredients

  • 1 pound (450 grams) pizza dough (we use half of this poolish pizza dough recipe)
  • 8 ounces (225 grams) low moisture mozzarella
  • 3.5 ounces (100 grams) gorgonzola
  • 3 slices (50 grams) prosciutto
  • 34 whole fresh figs, sliced
  • handful arugula

Instructions

  1. Preheat oven to 450°F (230°C) and grease a baking sheet or pizza pan.
  2. Turn out your dough onto a lightly floured surface and stretch into a circle about 12 inches (30 cm) in diameter.
  3. Transfer the dough to the prepared pan and add the mozzarella and gorgonzola. Tear the prosciutto into small pieces and place on top.
  4. Place the pan on a rack in the lower third of the oven and bake for approximately 15 minutes or until the crust is golden brown.
  5. Remove from oven and top with sliced fresh figs and arugula.
